The Brat Wisconsin Was Made For.

Made from Berkshire heritage pork raised on open pasture in Ixonia, Wisconsin. Four flavors. Natural casings. No fillers, no shortcuts. Just brats the way they’re supposed to be.

Not Your Grocery Store Brat

Most brats start with commercial pork. Ours start with Berkshire heritage pigs — a breed known for richer marbling, deeper flavor, and a texture you can actually taste the difference in.

Our pigs spend their days outside on pasture in Ixonia, WI, rooting around the way pigs were meant to. They forage wild on rolling fields, spring-fed land, and yes — the odd fallen apple. That kind of life produces pork that tastes like something. Something real.

When the time comes, we work with a trusted local butcher who shares our commitment to doing things the traditional way. Natural casings. A proper grind. Simple ingredients that let the pork be the star. No artificial preservatives. No shortcuts that would make our neighbors raise an eyebrow.

The result is a brat that doesn’t shrink on the grill, holds its snap when you bite into it, and makes people at the cookout ask where you got them.

✦ Berkshire Heritage Pork — the gold standard of pork breeds, known for exceptional flavor and marbling
✦ Pasture-Raised in Ixonia, WI — raised outside on real land, not in a barn
✦ Natural Casings — the traditional snap that commercial brats don’t deliver
✦ No added hormones or antibiotics — just clean, honest pork

Pick Your Flavor.

All four start from the same Berkshire heritage base – that’s the part that matters most. From there, it’s about what sounds good on your grill this Saturday.
Traditional brats, bratwurst, • pasture-raised bratwurst

Traditional

This one’s a throwback – and we mean that as a compliment. The Traditional is everything a Wisconsin bratwurst is supposed to be: the right grind, the right seasoning, natural casings, real pork. Nothing added to distract from what a great brat should taste like. If you grew up thinking brats were good, this one will remind you what you were actually tasting.

Cheddar Brats, heritage pork brats Wisconsin

Cheddar

Same Berkshire base, with cheddar worked into every bite. It melts into the pork as it cooks and adds a richness that makes an already great brat even harder to put down. A crowd favorite for a reason.

Jalapeño Cheddar brats, Wisconsin bratwurst

Jalapeño Cheddar

Heat and cheddar together, balanced into the pork so neither one takes over. It’s got some kick – enough to notice, not enough to regret it. Good for the people at the cookout who want a little something extra.

Pepperjack brats, authentic Wisconsin bratwurst

Pepperjack

Pepperjack cheese brings a creamy heat that’s different from straight jalapeño – smoother, more of a slow build. If you like a little warmth without the sharp bite, this is your brat.
